Peanut Butter Banana Sandwich

This is a variation of our healthy sandwich base recipe. Some people attribute the peanut butter banana sandwich to The King – Elvis Presley – himself. While rumor has it that his sandwich had bacon in it, we kept our version vegetarian friendly with sliced banana, creamy peanut butter, a dash of cinnamon, and a drizzle of honey. Culinary Tips for the Best Peanut Butter Banana Sandwich Recipe

This sandwich can be eaten cold or warm. For a grilled peanut butter banana sandwich, use a panini press. Lightly brush the outside of the bread with avocado or canola oil or melted butter to create a deliciously crispy exterior.

If toasting the bread, go for a very light golden brown color, as this will allow the sandwich to have some “give” when you cut or bite into it.

Ingredient Substitutions

  • Whole Grain Sandwich Bread: substitute a whole grain English muffin, whole grain bagel, sourdough bread, or use a piece of whole wheat pita bread to make a pita peanut butter sandwich.
  • Peanut Butter: substitute almond, cashew, walnut, pistachio, sunflower, or soy butter. Choose natural varieties with no added sugar and low sodium.
  • Banana: substitute thinly sliced apple, pear, or mashed raspberries.
  • Cinnamon: substitute pumpkin or apple pie spice or leave out.
  • Optional Honey: substitute agave or a drizzle of maple syrup. Note that maple syrup is runnier than honey, so drizzle carefully!

Whole Grain Bread

Whole grains are a good source of fiber, B vitamins, Vitamin E, trace minerals, and phytonutrients. Replacing refined grains (i.e. white bread) with whole grains (i.e. whole wheat bread) may reduce the risk of developing chronic conditions such as heart disease, diabetes, and certain types of cancer.

Peanut Butter

Nut butters are a great source of plant-based protein and healthy fat. Peanuts are high in monounsaturated fats, which are good for heart health.

Bananas

Bananas contain prebiotic fiber, vitamins, and minerals – important for digestion, steady energy, and metabolism. Greenish bananas are firm and higher in prebiotic fiber. Brownish bananas are soft and higher in natural sugar, making them a bit sweeter.

Ingredients
  

  • 2 slices whole grain sandwich bread
  • 2 Tablespoons natural peanut butter
  • ½ large banana
  • Dash cinnamon
  • Drizzle of honey (optional)

Instructions
 

  • If desired, toast bread.
  • Spread 1 Tablespoon peanut butter on each slice of bread.
  • Slice banana lengthwise to create strips or slice into circles – whichever you prefer!
  • Lay banana slices on one piece of bread. Sprinkle with a dash of cinnamon. Drizzle with honey if desired. Top with the other slice of bread.
  • Slice in half and enjoy!
