This is a variation of our healthy sandwich base recipe. If you love hummus, why not try it on a sandwich? Hummus not only provides fiber, protein, and phytonutrients, but also serves as the perfect spread on whole grain bread! Filled with feta cheese, cucumber, tomatoes, and spinach, this hummus sandwich is delicious and satisfying!

Culinary Tips for the Best Hummus Sandwich Recipe

This sandwich can be eaten cold or warm. For a grilled hummus sandwich, use a panini press. Lightly brush the outside of the bread with olive oil or melted butter to create a deliciously crispy exterior.

If toasting the bread, go for a very light golden brown color, as this will allow the sandwich to have some “give” when you cut or bite into it.

Ingredient Substitutions

  • Whole Grain Sandwich Bread: substitute a whole grain wrap, sourdough bread, or use a piece of whole wheat pita bread to make a pita hummus sandwich.

Whole Grain Bread

Whole grains are a good source of fiber, B vitamins, Vitamin E, trace minerals, and phytonutrients. Replacing refined grains (i.e. white bread) with whole grains (i.e. whole wheat bread) may reduce the risk of developing chronic conditions such as heart disease, diabetes, and certain types of cancer.

Hummus

The featured ingredient in hummus is garbanzo beans. Beans are one of our favorite foods because they are packed with high quality nutrients. All of the world’s longest lived populations consume beans weekly, if not daily. Beans of all varieties contain plant-based protein, complex carbohydrates, fiber, vitamins, and minerals. This is a variation of our healthy sandwich base recipe. Filled with feta cheese, cucumber, tomatoes, and spinach, this hummus sandwich is delicious and satisfying!

Ingredients
  

  • 2 slices whole grain sandwich bread
  • ¼ cup hummus
  • 2 Tablespoons crumbled feta cheese
  • ¼ cup thinly sliced cucumber
  • 1-2 slices fresh tomato
  • 6-8 spinach leaves

Instructions
 

  • If desired, toast bread.
  • Spread 2 Tbsp of hummus on each piece of bread. Top one piece of bread with feta cheese, cucumber, tomato, and spinach leaves.
  • Top with other piece of bread. Slice in half and enjoy!
