Ingredients
  

  • 2 large eggs
  • Dash salt and pepper
  • 2 teaspoons extra virgin olive oil
  • 2 slices of whole grain or sourdough bread
  • 1 slice cheese
  • ½ cup fresh fillings (spinach, tomatoes, avocado, mushrooms, bell pepper, onion, etc.)

  • Goat cheese or feta

Protein boosters (~2 oz):

  • Nitrate-free sausage, turkey, or chicken

Sauces & spreads:

Instructions
 

  • Whisk eggs with salt, pepper, and optional spices.
