If making the granola ahead of time, refer to our homemade granola base recipe or stovetop granola base recipe.

You can either pile everything in a bowl or split the ingredients into halves or thirds and build the parfait in layers.

Ingredient Substitutions

  • Greek Yogurt: substitute regular plain yogurt or a dairy-free variety. Choose any fat content that works within your overall diet.
  • Vanilla Extract: substitute ¼ teaspoon almond, lemon, or coconut extract.
  • Blueberries and Raspberries: substitute any fresh or frozen berries of your choosing. If using frozen fruit, choose options without added sugars and partially thaw before adding.
  • Granola: use our homemade granola base recipe or stovetop granola base recipe to make your own or use a store bought variety with low added sugar.
  • Almonds: use slivered or sliced almonds, or substitute toasted chopped walnuts, pecans, or cashews.
  • Liquid Sweetener: use honey, maple syrup, or agave.

The featured ingredients in this recipe are Greek yogurt, berries, and granola.

Greek Yogurt

Greek yogurt is a great source of B vitamins, calcium, and probiotics. It is also higher in protein than regular yogurt, making this parfait filling and satisfying. 

We recommend buying plain varieties in order to avoid added sugars and organic, if you can afford it. Select a fat content that works with your overall diet. If you tend to consume a lot of foods high in saturated fat, a low-fat or fat-free variety is your best choice. If you limit saturated fat in your diet, full-fat varieties are okay.

Blueberries and Raspberries

Blueberries are rich in nutrients and phytonutrients that may promote cardiovascular health, decrease cancer risk, and improve cognitive function. Raspberries are rich in Vitamin C and other phytonutrients that may promote heart health, reduce inflammation, and slow aging. Both fresh and frozen berries are healthy. 

Granola

Granola is made of oats, nuts/seeds, and dried fruit. Oats are a good source of fiber and complex carbohydrates. Fiber is important for digestion, satiety, stable blood sugar, good cholesterol, and healthy gut bacteria. Carbohydrates are important for energy and focus. 

Nuts and seeds are a great source of plant-based protein and healthy fat. 

We recommend making your own granola because it’s super easy and you can adjust the flavors and sugar to your taste. If choosing store bought granola, purchase varieties with low sugar and ingredients that you can recognize and pronounce.

Berry Parfait Serving Suggestions

This berry yogurt parfait is a great breakfast on its own! You can also reduce the ingredient quantities and enjoy yogurt with berries and granola as a quick and satisfying snack.

Storage Tips

If prepping the raspberry and blueberry yogurt parfait the night before serving, wait to add the granola until the morning. If you let the granola sit overnight, it will become soggy. Toasted almonds also lose their crunch overnight, so add in the morning.

Ingredients
  

  • ¾ cup plain Greek yogurt
  • ¼ teaspoon vanilla extract
  • ¼ cup fresh blueberries
  • ¼ cup fresh raspberries
  • ¼ cup granola
  • 2 Tablespoons toasted slivered almonds
  • Honey, agave, or maple syrup to taste

Instructions
 

  • In a small bowl, mix to combine yogurt and vanilla. You can either add the liquid sweetener with the yogurt or drizzle it on at the end.
  • Layer the yogurt, fruit, granola, and almonds in a bowl or cup.
  • Drizzle with liquid sweetener to taste. Enjoy!
