Ingredients
  

  • 2 large eggs
  • Dash of salt and pepper
  • 2  teaspoons extra virgin olive oil
  • 2 slices whole grain or sourdough bread
  • 1 slice pepper jack cheese
  • ½ avocado, sliced or mashed
  • Dash of your favorite hot sauce (plus more to taste)

Instructions
 

  • Whisk eggs with salt and pepper.
  • Heat extra virgin olive oil over medium-low heat in a 10–12” nonstick pan.
  • Pour in eggs, place 2 bread slices on top, then quickly flip to coat both sides.
  • Flip the whole thing, fold egg edges in, and add pepper jack cheese and avocado.
