Culinary Tips for the Best Herb Roasted Sweet Potatoes

We use weight instead of volume for sweet potatoes because sizes can be highly variable. Weigh at the store or use a simple kitchen scale. It’s okay if you have slightly more or less than 1 pound. Go ahead and use what you got!

Dice the sweet potato into equal sized pieces or you will have pieces that cook faster than others. Take our Knife Skills 101 course and learn how to do this like a chef!

Whisking the oil and spices together first ensures every bite has the same amount of flavor. No bland pieces allowed!

Leave the peel for the best nutrition. The peel is full of fiber and other vitamins, minerals, and phytonutrients that promote health. When diced and roasted, the peel is crisp and flavorful!

Be sure not to overcrowd the pan. Overcrowding causes steaming, and you won’t get those beautiful golden brown sides.

Ingredient Swaps & Substitutions

  • Sweet Potatoes: use any variety: orange, white, or even purple!
  • Canola or Avocado Oil: Substitute with a non-expensive extra virgin olive oil. We’ve found that the cheaper bottles from your local grocery store can withstand high heat.
  • Rosemary: sub with dried sage leaves. If subbing fresh sage, it might need to be added after cooking. It isn’t as hearty as rosemary.
  • Thyme: sub with dried oregano leaves. If subbing fresh oregano, see the note above regarding sage. We have the same concern!
  • Granulated Garlic: Substitute ¼ teaspoon garlic powder or 2 minced garlic cloves.
  • Smoked Paprika: use regular paprika, but it will be missing that extra flavor you get from smoked.

Ingredients
  

  • 1 pound sweet potatoes
  • 1 ½ Tablespoons canola or avocado oil
  • ½ Tablespoon finely chopped fresh rosemary or ½ teaspoon dried
  • ½ Tablespoon finely chopped fresh thyme or ½ teaspoon dried
  • ½ teaspoon granulated garlic
  • ½ teaspoon smoked paprika
  • ¼ teaspoon kosher salt
  • Dash black pepper

Instructions
 

  • Preheat oven to 425ºF.
  • Clean and scrub sweet potatoes well. Do not peel. Dice into ½-¾" cubes.
  • In a large mixing bowl, combine oil, rosemary, thyme, garlic, paprika, salt, and pepper. Add diced sweet potato. Using a spatula, toss to evenly coat.
  • Spread sweet potatoes on a baking sheet in a single layer. Do not overcrowd the pan.
  • Roast 25-30 minutes or until potatoes are browned, crisp, and easily pierced with a fork. Sprinkle with optional parmesan and/or chopped herbs. Enjoy!
