Culinary Tips for the Best Chocolate Dipped Pineapple

  • Blot Dry the pineapple with paper towels. You don’t want a lot of excess moisture on the pineapple, or the chocolate won’t coat well. Liquid + chocolate is not pretty!
  • Heat the chocolate in 30-second intervals, stirring between each round. Chocolate can burn, so don’t overheat!
  • Sprinkle the Tajín on while the chocolate is still warm; otherwise, it won’t stick as well.
  • Extra chocolate in the bowl? Don’t wash it away—dip additional fresh fruit in it!
  • In a rush? Pop the pineapple in the freezer to set.

Ingredient Swaps & Substitutions

  • Pineapple: Fresh pineapple works best. Cut into bite-sized chunks, rings, or spears and remove excess juice before dipping.
  • Dark Chocolate: We recommend using at least 70% dark chocolate when you can find it, but our favorite Ghirardelli chips are actually 60% dark.
  • Tajín: Adjust to taste, or swap for chili-lime seasoning or chili powder with a pinch of salt.

Instead of—or in addition to—Tajín, try other toppings. Chili powder, flaky sea salt, lime zest, or a light dusting of smoked paprika all add flavor without sacrificing nutrition.

Ingredients
  

  • 6 ounces dark chocolate (70% cocoa or higher recommended)
  • ½ fresh pineapple (~2 ½ cups)
  • Tajin

Instructions
 

  • Cut fresh pineapple into bite-size chunks, rounds, or spears. Pat dry with paper towels to remove excess moisture.
  • Dip pineapple pieces into melted dark chocolate, allowing excess to drip off.
  • Place on a parchment-lined baking sheet.
  • While the chocolate is still wet, lightly sprinkle with Tajín.
