  • Rinse your quinoa: This removes the natural coating (saponin), which can taste bitter.
  • Cut vegetables evenly: Uniform pieces ensure everything cooks at the same rate.
  • Sauté for flavor: Taking time to soften the vegetables builds a strong flavor base. Don’t stir constantly. You want the vegetables to sit still on the pan to brown. 
  • Toast the quinoa: Briefly sautéing quinoa before adding liquid enhances its nutty flavor.
  • Keep the lid on: Trapping steam is key for properly cooking the quinoa.
  • Don’t overcook: Once the quinoa is tender and the ring pops out, turn off the heat to avoid overcooking

Ingredients
  

  • 1 Tablespoon extra virgin olive oil
  • 1 medium red bell pepper, diced ½” (~1 cup)
  • 1 medium zucchini, diced ½” (~1 cup)
  • ½ small yellow onion, diced ¼” (~½ cup)
  • 1 large garlic clove, minced
  • ½ cup quinoa, rinsed
  • 1 cup marinara sauce
  • ¾ cup chicken or vegetable broth
  • Salt to taste (¼ teaspoon kosher recommended)
  • 1 cup shredded mozzarella cheese

Garnishes:

  • Basil leaves
  • Parmesan
  • Sliced black olives
  • Red pepper flakes

Instructions
 

  • Heat a large 10" skillet over medium heat. Add oil. Once the oil is shimmering, add the bell pepper, zucchini, and onion. Sprinkle with salt. Sauté until vegetables are soft and onions are translucent, ~10 minutes.
  • Add garlic and quinoa to skillet. Sauté for 30 seconds more, stirring constantly.
  • Add the marinara, broth, and salt to the pan. Stir to combine all ingredients. Bring to a boil. Once boiling, cover with a lid, reduce heat, and simmer for 20 minutes, stirring twice during the cooking process.
  • Once quinoa is fully cooked, turn off heat, top with shredded cheese, then cover briefly to melt. For extra melty cheese, briefly broil in the oven. Top with desired garnishes. Enjoy!
