Summer Quinoa Pizza

- 1 Tablespoon extra virgin olive oil
- 1 medium red bell pepper, diced ½” (~1 cup)
- 1 medium zucchini, diced ½” (~1 cup)
- ½ small yellow onion, diced ¼” (~½ cup)
- 1 large garlic clove, minced
- ½ cup quinoa, rinsed
- 1 cup marinara sauce
- ¾ cup chicken or vegetable broth
- Salt to taste (¼ teaspoon kosher recommended)
- 1 cup shredded mozzarella cheese
Garnishes:
- Basil leaves
- Parmesan
- Sliced black olives
- Red pepper flakes
Heat a large 10" skillet over medium heat. Add oil. Once the oil is shimmering, add the bell pepper, zucchini, and onion. Sprinkle with salt. Sauté until vegetables are soft and onions are translucent, ~10 minutes.
Add garlic and quinoa to skillet. Sauté for 30 seconds more, stirring constantly.
Add the marinara, broth, and salt to the pan. Stir to combine all ingredients. Bring to a boil. Once boiling, cover with a lid, reduce heat, and simmer for 20 minutes, stirring twice during the cooking process.
Once quinoa is fully cooked, turn off heat, top with shredded cheese, then cover briefly to melt. For extra melty cheese, briefly broil in the oven. Top with desired garnishes. Enjoy!
