For this recipe, don’t worry about being exactly precise with the veggie measurements. If you have 4 ½ cups of veggies, that’s okay! Just note that the more veggies you add, the less sauce you will get per bite.

The teriyaki stir fry sauce in this recipe is just enough to coat the veggies, but if you want extra for rice, quinoa, meat, or tofu, simply double the quantity.
Ingredient Substitutions
- Canola Oil: substitute avocado or peanut oil.
- Vegetables: use any combination, noting whether they are hard, medium, or soft to adjust cook time as appropriate.
- Reduced Sodium Tamari or Soy Sauce: substitute liquid aminos or coconut aminos.
- Mirin: substitute with white wine or sherry.
- Rice Vinegar: substitute apple cider or white vinegar.
- Granulated Sugar: substitute brown or coconut sugar.
- Ginger: leave out for a more authentic sauce or substitute a dash of ground ginger.
- Garlic: leave out for a more authentic sauce or substitute ¼ teaspoon granulated garlic or ⅛ teaspoon garlic powder.

Serving Suggestions
Build a balanced meal by serving veggie stir fry with some lean protein and a whole grain such as brown rice or quinoa. You can also serve this teriyaki stir fry with noodles; we recommend soba noodles, made with whole grain buckwheat flour. Top with green onions, sesame seeds, sesame oil, and/or toasted cashews or peanuts for extra flavor, texture, and nutrition.

Storage Tips
Allow stir fry to cool, then place in an airtight container for up to 7 days.
You can also freeze leftover stir fry for up to 3 months. For an easy reheat-and-eat lunch, place individual servings of rice and veggies in freezer safe containers, allow to cool, then freeze.

Teriyaki Vegetable Stir Fry
Ingredients
Teriyaki Sauce
- 1 Tablespoon reduced sodium tamari or soy sauce
- 1 Tablespoon mirin
- ½ Tablespoon rice vinegar
- ½ Tbsp water
- 1 ½ teaspoons sugar
- ½ teaspoon cornstarch
- 1 teaspoon minced ginger (optional)
- 1 garlic clove minced (optional)
Stir Fry
- 1 Tbsp canola oil
- 1 ½ cups broccoli
- 1 cup carrots halved lengthwise
- 1 cup sliced bell pepper strips ¼” thick
- ½ cup frozen edamame shelled, thawed
Optional Topping
- roasted peanuts
Instructions
- Combine tamari or soy sauce, mirin, rice vinegar, water, sugar, cornstarch, and optional ginger and/or garlic in a small bowl.
- Heat a large skillet or wok over medium high heat. Add canola oil; use enough to coat the bottom of the pan. Once the oil is shimmering, add broccoli and carrots, stirring continuously. As they soften, add bell pepper strips and edamame, and continue to cook until all vegetables are crisp-tender. Add teriyaki sauce to skillet and toss to coat, allowing sauce to simmer for about 30 seconds.
- Garnish with optional roasted peanuts. Serve with brown rice or quinoa. Enjoy!
