Egg Bites Base Recipe
Ingredients
- 8 large eggs
- 1 cup cottage cheese (full-fat or 2%)
- ½ cup cup shredded cheese
- 1 Tablespoon cornstarch
- ½ teaspoon black pepper
- Up to 1 teaspoon spice(s)
Mix-ins to YOUR taste
- 1 teaspoon - 1 Tablespoon chopped fresh herbs (½ teaspoon dried)
- ½ cup- 1 cup diced (~¼”-½”) raw or cooked vegetables
- ¼ cup crumbled feta cheese
- ½ cup cooked diced (~½”) protein food (chicken, nitrate-free ham or sausage, tofu)
- ½ cup cooked whole grains (quinoa, bulgur, farro, brown rice)
- 1-2 Tablespoons hot sauce or salsa
Instructions
- Preheat oven to 300°F. Prepare a 12-cup muffin tin or silicone muffin cups with nonstick spray.
- Place eggs, cottage cheese, shredded cheese, cornstarch, black pepper, and spices in a blender or processor. Blend until smooth and frothy, 30–60 seconds.
- In a medium bowl, combine mix-ins.
- Divide mix-ins evenly among muffin cups. Pour egg mixture over mix-ins, ~ ¼ cup per egg bite. Place muffin pan on a baking sheet. Carefully pour water into the baking sheet until it comes halfway up the muffin cups.
- Bake for ~30 minutes, or until set. Do not overcook. Remove from oven and let cool. Run a knife around edges to release. Enjoy!
