Ingredients
Salmon Base Recipe
~1poundsalmon filets, with skin
1-2teaspoonsspice blend (optional)
Dashsalt & pepper
Yogurt Sauce Base Recipe
½cupplain Greek yogurt
2Tablespoonschopped fresh herbs
½Tablespoonfinely diced onion or shallot and/or
1small garlic clove, minced (~½ teaspoon)
Salt & pepper to taste
Yogurt Sauce Additions to YOUR taste
1TablespoonDijon mustard
1-2teaspoonshot sauce
1teaspooncitrus juice or vinegar
¼teaspooncitrus zest

Instructions
Preheat oven to 400°F. Prepare a baking sheet with parchment paper, nonstick spray, or a light brush of oil.
Place salmon skin side down on the baking sheet. Season with salt and pepper or rub a spice blend on the top and sides of the filets.
In a small bowl, whisk together the yogurt, herbs, onion and/or garlic, and additional mix-ins. Add salt and pepper to taste.
Spread sauce over salmon (you might have extra depending on amount of salmon). Bake for ~10 minutes per inch of thickness or until salmon flakes easily when tested with a fork or internal temperature reaches 145ºF. Enjoy!
Notes
If using a spice rub, let the spices sit on the salmon for ~15 minutes before cooking for increased flavor development. If your spice blend contains salt, there is no need to sprinkle additional salt on the salmon.
Garnish with extra herbs and/or serve with lemon or lime wedges for an extra pop of flavor.
