Sausage Egg Bites with Shakshuka Veggies

These sausage egg bites with shakshuka veggies are a fun global twist on our egg bites base recipe. They pack flavors of the classic North African and Middle Eastern dish—tomatoes, onions, peppers, garlic, feta, and a hint of spice—into a portable, protein-rich breakfast or snack.

Ingredients

  • 8  large eggs
  • 1 cup cottage cheese (full fat or 2%)
  • ½ cup shredded mozzarella
  • 1 Tablespoon cornstarch
  • ½ teaspoon black pepper
  • ¼ teaspoon granulated garlic
  • 1 teaspoon extra virgin olive oil
  • ½ red bell pepper, diced (~¼”)
  • Dash salt
  • ½ cup canned low-sodium petite diced tomatoes, drained well
  • ½ cup cooked and diced (~½”) nitrate-free chicken breakfast sausage
  • ½ cup feta cheese crumbles

Instructions

  • Preheat oven to 300°F. Prepare a 12-cup muffin tin or silicone muffin cups with nonstick spray.
  • Place eggs, cottage cheese, shredded mozzarella, cornstarch, black pepper, and granulated garlic in a blender or processor. Blend until smooth and frothy, 30–60 seconds.
  • Heat an 8” sauté pan over medium heat. Add oil. Once the oil is shimmering, add the diced onions. Cook for ~2 minutes, stirring occasionally. Add bell pepper and cook ~1 minute. Add diced tomatoes and dash of salt and cook ~1 more minute. Remove from heat and stir in sausage.
  • Divide the onion-sausage mixture evenly among muffin cups. Pour egg mixture over each cup, about 1/4 cup per egg bite, and sprinkle with feta. Place muffin pan on a baking sheet and pour water into the sheet until it comes halfway up the muffin cups.
  • Bake for 30 minutes, or until set. Do not overcook. Remove from oven and let cool. Run a knife around edges to release. Enjoy!

Notes

Consider adding 1 teaspoon smoked paprika, 1 teaspoon cumin, ½ teaspoon coriander, and/or ¼ teaspoon of cayenne for more Shakshuka flavor!
