Ingredients

  • 1 Tablespoon brown sugar
  • 1 Tablespoon canola oil
  • 1 Tablespoon honey
  • ½ teaspoon vanilla
  • ¼ teaspoon cinnamon
  • Dash salt
  • 1 cup old-fashioned oats
  • ½ cup lightly roasted peanuts
  • ¼ cup dark chocolate chips

Instructions

  • Heat a large skillet over medium-low heat. Add brown sugar, oil, honey, vanilla, cinnamon and salt. Stir with a spatula until melted and mostly combined.
  • Add oats to the pan, stirring to coat with the oil mixture. Stir frequently for 6 -7 minutes, or until oats are almost fully toasted and golden brown.
  • Add the peanuts, stir into the oats, and cook for 2-3 more minutes until the oats are fully toasted.
  • Remove from heat, and spread in a single layer on a baking sheet or sheet of parchment paper to cool. Granola will crisp as it cools.
  • Once cooled, add chocolate chips, then store in an airtight bag or container. Enjoy!

Notes

Measure the brown sugar first; it needs to be measured in a clean spoon, otherwise it will stick to the bottom. Then, by measuring the oil before the liquid sweetener, the liquid sweetener will just slide right out!
