Cinnamon Waffles with Yeast

- 2 ¼ teaspoons active dry yeast
- 1 Tablespoon sugar
- ½ cup warm water
- 2 cups whole milk
- 6 Tablespoons butter, melted
- 1 teaspoon vanilla extract
- ¾ teaspoon kosher salt
- 2 cups white whole wheat flour (or 1 cup flour + 1 cup old fashioned oats)
- 1 ½ teaspoons cinnamon
- 2 large eggs
In a large bowl, combine yeast, sugar, and water. Set aside for about 5 minutes or until foamy.
Add milk, unsalted butter, vanilla extract, and salt. Whisk until combined.
Add flour and cinnamon, and whisk until combined. Cover with plastic wrap and let stand 2 to 3 hours at room temperature or overnight in the refrigerator.
Heat waffle iron. Whisk eggs into waffle batter. Stir until combined.
Using a pastry brush or paper towel, lightly coat the iron with oil or melted butter. Add about ½ cup of waffle batter to the iron for each waffle. Cook waffles until golden and crisp. Enjoy!
