Black Bean Meatballs

Ok, so we know the name black bean meatball might be a bit misleading because there actually isn’t any meat, but we didn’t know what else to call them! They are a great vegetarian option, and a fun way to incorporate more beans in your meals!

Ingredients

  • Cooking spray
  • 15- ounce can low-sodium black beans, drained and rinsed
  • ¼ cup Panko bread crumbs
  • ¼ cup finely shredded cheddar cheese
  • 1 Tbsp chopped fresh cilantro
  • 1 Tbsp minced chipotles in adobo
  • 1 Tbsp finely diced red onion
  • 1 Tbsp extra virgin olive oil
  • 1 large egg
  • 1 small garlic clove, minced
  • ½ tsp cumin
  • ¼ tsp kosher salt
  • Dash of pepper

Instructions

  • Preheat oven to 425ºF. Spray a baking sheet with cooking spray.
  • Place beans in a large mixing bowl and mash until almost smooth or leave slightly chunky.
  • Add bread crumbs, cheese, cilantro, chipotles, onion, extra virgin olive oil, egg, garlic, cumin, salt, and pepper. Mix until combined.
  • Use a portion scoop or spoons to create golf ball sized meatballs and place on the pan, spaced ~1” apart.
  • Cook 8-10 minutes or until cooked through and slightly brown on the edges. Enjoy!
