- 2 Tablespoons rice vinegar
- 1 Tablespoon low-sodium soy sauce (or tamari)
- 1 Tablespoon toasted sesame oil
- 1 Tablespoon honey (or maple syrup)
- 1 small garlic clove, minced (~½ teaspoon)
- 1 Tablespoon grated fresh ginger
- Dash red pepper flakes (optional)
- 4–5 large carrots, peeled into ribbons with a vegetable peeler (~4 cups)
- 1 Tablespoon toasted sesame seeds
- 1 Tablespoon chopped fresh cilantro
In a large bowl, whisk together vinegar, soy sauce, sesame oil, honey, garlic, ginger, and optional red pepper flakes.
