Servings: 2 side salads (1.5 cups each)

1 cup diced watermelon
1/2 cup yellow cherry tomatoes, halved
2 cups arugula
1 Tbsp mint, chopped
2 Tbsp sliced almonds, toasted
2 Tbsp feta cheese
1 tsp red wine vinegar
2 tsp extra virgin olive oil
Salt & pepper to taste!

1. In a medium sized bowl, make the vinaigrette. Add vinegar, salt and pepper to bowl. Slowly add extra virgin olive oil, whisking to combine.
2. Add watermelon, halved cherry tomatoes, arugula, mint, almonds, and feta cheese to vinaigrette. Toss with tongs to evenly coat salad with dressing.
