Some of my highlights

Vahista, aka “Chef V”, is a Registered Dietitian Nutritionist and Chef. During her dietetic internship, she realized that pursuing a culinary degree would help her better serve future patients and clients. Vahista has run her own catering business, in addition to serving as Menu Planner for Dallas ISD, Dietitian/Supervisor and Chef for HEB ISD, and Child Nutrition Consultant for Education Service Center Region 11. Her most recent role involved training directors, menu planners, and other school foodservice personnel. Vahista volunteers her time conducting cooking demos and talking about nutrition in the community.

Vahista’s passion truly is teaching people about nutrition and cooking, and she especially loves working with kids. Vahista was even invited to teach kids about healthy cooking at the White House for Michelle Obama’s Let’s Move campaign! Her specialty, like Lindsey’s, is healthy cuisine, but she is a wannabe Italian chef, having spent a summer semester taking culinary classes in Florence, Italy!
Vahista lives in Fort Worth, home of the TCU Horned Frogs, with her husband Charlie, baby boy Enzo, and kale eating chocolate lab mix, Picaboo Street.

Chef Lindsey Schoenfeld, RDN

Some of my highlights

Lindsey has a BS in Nutritional Science from Texas A&M University and is a Registered Dietitian Nutritionist and Chef. In an effort to marry her nutrition education with her love for the culinary arts, she pursued a Certificate of Culinary Arts from the Culinary School of Fort Worth.

Over the past ten years she served as Operation Specialist to twenty schools in Dallas ISD, Menu Planner/Dietitian at Mesquite ISD, and most recently as Director of Student Nutrition at Lovejoy ISD. As Director of Lovejoy ISD, she successfully completed a perfect Administrative Review.

Lindsey has devoted herself to the field of nutrition. Her career has provided opportunities to educate families on health and wellness through menu planning and recipe development. She also spent time assisting Sur la Table with cooking classes and demonstrations. She has been fortunate enough to study the kitchens and cuisines in cities around the world, including Napa Valley, CA, Charleston, SC and Florence, Italy.
Lindsey is a marathon runner, a proud mother of two, and a loving wife. Lindsey enjoys spending much of her time developing recipes for families with children and for athletes.

Chef Kelsey Anderson, RD, LD, CNSC, RYT-200

Some of my highlights

Kelsey is a registered dietitian, chef, and yoga instructor. Her growing passion for food and cooking in college led her to culinary school after becoming a dietitian. She has a passion for both clinical and culinary nutrition. Her experience includes working with families as a full-time private chef, school menu analysis, and working with the medical team in hospitals. She specializes in the nutrition support of critically-ill patients, and holds the Certified Nutrition Support Clinician credential. She also currently works as a PRN at Texas Health Methodist and Southwest Hospitals, as well as Regency Hospital. Additionally, Kelsey is a registered yoga instructor at Sumit’s Hot Yoga. Her experience as a yoga instructor weaves it’s way into all aspects of her life.

Kelsey has a passion for good food and travel. Her favorite place for food is Paris where she had the best meal of her life… so far. She is passionate about humanitarian and equality issues, and has volunteered rebuilding homes destroyed by earthquakes in Morocco, and worked organizing schools in Tanzania. Learning by immersing herself in different cultures is her favorite part of traveling. She has also volunteered by teaching nutrition and cooking classes to homeless women in shelters, and preparing meals weekly for those that have limited resources and diagnosed with HIV/AIDS. 
Kelsey lives in Fort Worth, and has two furry children, her rescue dogs, Chuey and Georgette. She also has her first nephew on the way, and can’t wait to meet him!
