Servings: 5 sides (1/2 cup each)

1 can low-sodium corn or 1.5 cups frozen (thawed) or fresh corn
1 can low-sodium black beans
Juice from 1 lime
2 Tbsp extra virgin olive oil
1/2 tsp cumin
1 garlic clove, minced
Salt & pepper to taste!

1. Drain and rinse black beans and corn (if canned).
2. In a medium sized bowl (large enough to hold beans and corn) make dressing.  Whisk together lime juice, extra virgin olive oil, cumin, and garlic.
3. Add beans and corn to dressing, tossing to combine. Add salt and pepper to taste.

Beyond the Basics
Consider adding all or some of the below:
chopped cilantro (~2 Tbsp.)*
diced bell pepper (¼ cup)*
diced purple onion or sliced green onions (¼ cup)*
diced jicama (1/4 cup)
halved cherry tomatoes (½ cup)*
avocado (1 each)*
